There have been many times where I was craving some good pork sausage. I don’t always have fresh wild or pastured pork on hand and pastured pork is not always easy to find in the stores. Grass fed ground beef is readily available and can be adapted to take on the sausage flavor just by adding a few common spices to the mix. In other words, ground beef is not just for burgers.
I believe that sage is the key ingredient in sau-sage since it is actually part of the word. This spice mixture can be modified in many ways. Examples include, ground fennel seeds and ground cumin. It depends on one’s tastes and what happens to be available.

Ground Beef Sausage
This is simply the spice recipe to mix in with the ground beef by hand. Use two tablespoons per pound of ground beef
Ingredients
- 2 T granulated onion
- 2 T granulated garlic
- 1 T dried thyme
- 2 t ground cinnamon
- 1 T dried ground sage
- 1.5 t sea salt
- 1.5 t fresh ground black pepper
Instructions
- Mix all spices together in a bowl or mortar and pestle.
- Add two tablespoons of spice mixture per pound of meat and mix by hand allowing the spices to be uniform throughout the meat.
Notes
Flavor options Add 1/4 cup of organic blueberries or chopped apples to mixture for a slight sweetness. 2-3 Teapoons of maple syrup to mixture. Sausage goes great with this collard green recipe.
