I used to just make plain mayonnaise and add some blue cheese and call it “Ranch dressing” Once my kids decided they didn’t like blue cheese anymore, I had to make some adaptations. I found this and made some minor modifications and I can get them to eat it on veggies or just as a sauce for any foods.

Ranch Dressing (Paleo version)

Adaped from Paleonewbie.com, this is simple and provides a nice tanginess that the kids seem to enjoy. While using traditional coconut milk, I cannot get it to thicken but still pour it over the kids vegetables and that works well. If you can find the already thick "coconut creme" or use the the thick part in the can before shaking. Optional but highly recommended is to add 1/2 avocado to this recipe.

Ingredients
  

  • 1/2 cup coconut milk full fat
  • 2 tbs Lime juice
  • 1 1/2 tsp chives dried or chopped fresh
  • 3/4 tsp dill dried
  • 1 tsp parsley dried
  • 1/2 tsp garlic powder
  • salt & pepper to taste

Instructions
 

  • Put all dressing ingredients into a blender (or immersion blender), and mix until creamy.
